BBQ Ranch Crispy Chickpea Wraps

Ingredients
  

1 can (15 oz) of chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon chili powder

Salt and pepper to taste

1/2 cup BBQ sauce (your choice)

1/2 cup ranch dressing (store-bought or homemade)

1 large tortilla wrap (whole wheat or flour)

1 cup shredded lettuce

1/2 cup diced tomatoes

1/4 cup red onion, thinly sliced

1/4 cup shredded cheddar cheese (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) to get it nice and hot for roasting the chickpeas.

    Prepare the Chickpeas: On a baking sheet, toss the drained chickpeas with olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper until well coated.

      Roast the Chickpeas: Spread the chickpeas in a single layer on the baking sheet. Roast in the preheated oven for 25-30 minutes, shaking the pan halfway through, until golden and crispy.

        Coat with BBQ Sauce: Once the chickpeas are crispy, remove them from the oven and drizzle the BBQ sauce over them. Toss gently to coat. Return to the oven for an additional 5 minutes to caramelize the sauce.

          Prepare the Wrap: While the chickpeas are roasting, lay out your tortilla wrap. Spread a generous amount of ranch dressing over the entire surface.

            Assemble the Wrap: On one side of the wrap, add the shredded lettuce, diced tomatoes, sliced red onion, and the crispy BBQ chickpeas.

              Add Cheese (Optional): Sprinkle shredded cheddar cheese on top if desired, then fold the wrap tightly, tucking in the sides.

                Serve: Cut the wrap in half, garnish with fresh cilantro or parsley, and serve immediately with extra ranch dressing on the side for dipping.
