Beef Stir Fry with Noodles

8 oz (225g) beef sirloin, thinly sliced against the grain

7 oz (200g) egg noodles or rice noodles

2 tablespoons vegetable oil

3 cloves garlic, minced

1-inch piece of ginger, grated

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 cup snap peas, trimmed

3 green onions, sliced (white and green parts separated)

¼ cup soy sauce (low sodium preferred)

2 tablespoons oyster sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon sugar (optional)

Chili flakes or fresh chili (to taste)

Sesame seeds for garnish

Instructions
 

Prepare the Noodles: If using egg noodles, cook according to package instructions until al dente. Drain and set aside. If using rice noodles, soak them in hot water for about 10 minutes or until pliable, then drain.

    Marinate the Beef: In a bowl, combine the sliced beef with 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, and 1 tablespoon of cornstarch. Mix well and set aside for about 15 minutes to marinate.

      Stir-Fry the Beef: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef in a single layer and stir-fry for about 2-3 minutes until browned. Remove the beef from the pan and set it aside.

        Cook the Vegetables: In the same wok, add the remaining tablespoon of vegetable oil. Add the minced garlic, grated ginger, and the white parts of the green onions. Stir-fry for about 30 seconds until fragrant. Then, add the sliced bell peppers, broccoli florets, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

          Combine Ingredients: Return the stir-fried beef back into the wok. Pour in the remaining soy sauce, oyster sauce, rice vinegar, sesame oil, and optional sugar. Toss everything together for about 1-2 minutes until well combined and heated through.

            Add Noodles: Add the cooked noodles to the wok, gently tossing to combine with the beef and vegetables. If the mixture seems dry, add a splash of water or additional soy sauce as needed.

              Finish and Serve: Once thoroughly mixed and heated, remove the wok from heat. Transfer the stir fry to serving plates, garnishing with sliced green onions, chili flakes, and sesame seeds.
