1 lb ground beef

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

½ cup salsa

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Cook the Beef: In a large skillet over medium heat, add the ground beef. Add the chopped onion and sauté until the beef is browned and the onions are soft, about 5 minutes.

    Add Garlic and Spices: Stir in the minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for an additional 2 minutes until the garlic is fragrant.

      Combine Ingredients: Add the cooked rice and black beans to the beef mixture. Stir until everything is well combined and heated through. Remove from heat.

        Prepare Tortillas: In a separate skillet, warm each flour tortilla over low heat for about 30 seconds on each side until pliable.

          Assemble Burritos: Place a generous scoop of the beef mixture in the center of each tortilla. Top with salsa and a mix of the cheddar and Monterey Jack cheeses.

            Fold and Roll: Fold the sides of the tortilla in, then roll it tightly from the bottom to the top to form a burrito. Repeat for the remaining tortillas.
