Ingredients

8 ounces linguine or spaghetti

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup chicken broth or white wine

Zest of 1 lemon

Juice of 1 lemon

1/2 cup heavy cream

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Prepare the Shrimp: While the pasta cooks, season the shrimp with salt and pepper. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp in a single layer and cook for 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Sauté the Aromatics: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, stirring frequently to avoid burning.

Make the Sauce: Pour in the chicken broth or white wine, scraping up any bits stuck to the bottom of the pan. Bring to a simmer, then add the lemon zest, lemon juice, and heavy cream. Stir well and let it simmer for about 2-3 minutes, until slightly thickened.

Combine Everything: Add the cooked pasta to the skillet, along with the halved cherry tomatoes and the reserved pasta water, a little at a time, until desired consistency is reached. Return the shrimp to the skillet and toss everything together gently. Cook for an additional 1-2 minutes, just to heat through.

Finishing Touches: Remove from heat and stir in the chopped parsley. Taste and adjust seasoning with more salt and pepper if needed.

Serve: Plate the pasta and shrimp, garnishing with additional fresh parsley and a generous sprinkle of grated Parmesan cheese. Enjoy your delightful Garlic Butter Shrimp Pasta!
