For the Cheesecake Base:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

Pinch of salt

For the Cheesecake Filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

½ cup sour cream

½ cup heavy cream

For the Blueberry Swirl:

2 cups fresh blueberries (or frozen, thawed)

½ cup granulated sugar

1 tbsp lemon juice

1 tsp cornstarch

1 tbsp water

Instructions
 

Prepare the Blueberry Swirl:

    - In a small saucepan, combine the blueberries, sugar, lemon juice, cornstarch, and water.

      - Cook over medium heat, gently stirring until the blueberries start breaking down and the mixture thickens (about 5-7 minutes).

        - Remove from heat and let cool slightly before blending into a smooth sauce. Set aside.

          Prepare the Crust:

            - Preheat your oven to 325°F (160°C).

              - In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and salt.

                - Mix until all crumbs are moistened. Press the mixture firmly into the bottom of a 9-inch springform pan.

                  - Bake for 10 minutes, then remove from the oven and let cool while you prepare the filling.

                    Prepare the Cheesecake Filling:

                      - In a large mixing bowl, use an electric mixer to beat the cream cheese until smooth and creamy.

                        - Gradually add in the sugar and vanilla extract, mixing until well combined.

                          - Add the eggs one at a time, mixing until just combined after each addition – be careful not to overmix.

                            - Stir in the sour cream and heavy cream until smooth.

                              Combine and Swirl:

                                - Pour half of the cheesecake filling over the crust in the springform pan.

                                  - Drop spoonfuls of the blueberry sauce on top of the filling and use a knife to create swirls.

                                    - Pour the remaining cheesecake filling on top and repeat the swirling process with the remaining blueberry sauce.

                                      Bake the Cheesecake:

                                        - Place a shallow baking dish filled with water on the bottom rack of your oven to create steam.

                                          - Bake the cheesecake on the middle rack for 60-70 minutes, or until the edges are set but the center still has a slight jiggle.

                                            - Once done, turn off the oven and crack the door open, leaving the cheesecake inside for 1 hour to cool gradually.

                                              Cool and Refrigerate:

                                                - Remove the cheesecake from the oven and allow it to cool at room temperature for an additional 2-3 hours.

                                                  - Once cool, cover and refrigerate for at least 4 hours or overnight for best results.

                                                    Serve:

                                                      - Before serving, gently run a knife along the edges of the springform pan to loosen.

                                                        - Remove the sides of the springform pan carefully.
