For the Chocolate Cake:

1 ¾ cups all-purpose flour

2 cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup milk

½ cup vegetable oil

1 cup boiling water

½ cup bourbon (preferably a smooth, mild variety)

2 teaspoons pure vanilla extract

For the Blackberry Buttercream:

1 cup unsalted butter, softened to room temperature

4 cups powdered sugar

⅓ cup fresh blackberry puree (from about 1 cup of fresh blackberries)

2 tablespoons heavy cream

1 teaspoon vanilla extract

A pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.

      Add Wet Ingredients: Add in the eggs, milk, vegetable oil, bourbon, and vanilla extract. Beat on medium speed for about 2 minutes until well mixed.

        Incorporate Boiling Water: Carefully stir in the boiling water until the batter is well combined. It will be very thin – this is normal!

          Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let them cool in the pans for 10 minutes, then remove from pans and transfer to wire racks to cool completely.

            Make the Blackberry Buttercream: In a large bowl, beat the softened butter on medium speed until creamy, about 2 minutes. Gradually add the powdered sugar, mixing on low until incorporated. Then, increase to medium speed.

              Add Blackberry Puree: Stir in the blackberry puree, heavy cream, vanilla extract, and a pinch of salt. Beat on medium-high speed until the buttercream is light and fluffy, about 3-4 minutes.

                Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of blackberry buttercream on top, then place the second layer on top. Frost the tops and sides with the remaining buttercream.

                  Decorate (Optional): Garnish the top with fresh blackberries, chocolate shavings, or additional sprigs of mint for presentation.
