Breakfast Stuffed Puff Pastry Bars

Ingredients
  

1 sheet of puff pastry (thawed)

4 large eggs

1/2 cup milk

1/2 cup shredded cheddar cheese

1/2 cup diced cooked bacon or sausage (or a mix)

1/4 cup finely chopped bell pepper (red or green)

1/4 cup finely chopped onion

Salt and pepper to taste

1 tablespoon fresh chives, chopped (optional)

1 egg (for egg wash)

Sesame seeds (for topping, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet to smooth out any creases. Use a knife to cut it into 4 equal rectangular pieces.

      Make the Filling: In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the cooked bacon or sausage, cheddar cheese, bell pepper, onion, and chopped chives until well combined.

        Assemble the Bars: Place a generous spoonful of the egg mixture in the center of each puff pastry rectangle, leaving about a 1-inch border on all sides. Fold the edges of the pastry over the filling, then crimp the seams with a fork to seal the bars.

          Egg Wash: In a small bowl, beat the remaining egg. Brush this egg wash over the tops of the stuffed pastry bars for a golden finish. If desired, sprinkle sesame seeds on top.

            Bake: Place the prepared stuffed puff pastry bars on the lined baking sheet and bake in the preheated oven for 20-25 minutes or until they are puffed and golden brown.

              Cool and Serve: Once baked, remove the bars from the oven and let them cool for a few minutes. Serve warm, and enjoy your delicious breakfast creation!
