Ingredients

4 cups green cabbage, shredded

1 cup red cabbage, shredded

1 cup carrots, grated

1/2 cup fresh cilantro, chopped

1/4 cup red onion, thinly sliced

1/2 cup mayonnaise

2 tablespoons lime juice (about 1 lime)

1 tablespoon honey (or agave syrup for a vegan option)

1 teaspoon Dijon mustard

1/2 teaspoon cumin

Salt and pepper to taste

Optional: 1 diced jalapeño for heat

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the green cabbage, red cabbage, grated carrots, chopped cilantro, and sliced red onion. If you're adding jalapeño for a spicy kick, toss it in as well.

Make the Dressing: In a separate smaller bowl, whisk together the mayonnaise, lime juice, honey, Dijon mustard, cumin, salt, and pepper until the mixture is smooth and creamy.

Combine: Pour the dressing over the cabbage mixture. Using tongs or salad servers, toss everything together until the vegetables are well coated with the dressing.

Chill: Cover the coleslaw and place it in the refrigerator for at least 30 minutes. This allows the flavors to meld and the vegetables to soften slightly.

Taste and Adjust: After chilling, give the coleslaw a taste. Adjust seasoning with additional salt, pepper, or lime juice as desired.

Serve: Serve chilled as a refreshing side dish for barbecues, tacos, or grilled meats. Enjoy the bright and zesty flavors!
