2 cups vegetable broth or water

2 cups fresh broccoli florets (or frozen, thawed)

1 cup grated sharp cheddar cheese (plus more for topping)

1 cup milk (dairy or plant-based)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Dijon mustard

1/2 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Preheat the oven: Start by preheating your oven to 350°F (175°C).

    Cook the quinoa: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and fluff with a fork.

      Prepare the broccoli: If using fresh broccoli, steam the florets for about 3-4 minutes until tender yet crisp. If using frozen, ensure they are fully thawed and drained.

        Mix the wet ingredients: In a large mixing bowl, whisk together the milk, eggs, garlic powder, onion powder, salt, pepper, and Dijon mustard until well combined.

          Combine ingredients: Add the cooked quinoa, steamed broccoli, and 1 cup of cheddar cheese to the wet mixture. Stir until everything is evenly coated.

            Transfer to baking dish: Pour the quinoa and broccoli mixture into a greased 9x13 inch baking dish. Spread it out evenly.
