Buffalo Chicken Stuffed Potatoes

4 large russet potatoes

2 cups cooked shredded chicken

½ cup buffalo wing sauce (adjust to taste)

½ cup cream cheese, softened

1 cup shredded cheddar cheese

¼ cup sour cream

2 green onions, chopped

1 teaspoon garlic powder

Salt and pepper to taste

Olive oil for brushing

Optional: blue cheese crumbles for topping

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Scrub the russet potatoes under cold water and then pat them dry. Prick the potatoes several times with a fork to allow steam to escape. Brush each potato with olive oil and sprinkle with salt.

      Bake the Potatoes: Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes or until they are tender and a fork can easily pierce through.

        Make the Buffalo Chicken Filling: In a large bowl, combine the shredded chicken, buffalo wing sauce, cream cheese, garlic powder, and half of the cheddar cheese. Mix well until all ingredients are incorporated.

          Cut the Potatoes: Once the potatoes are cooked, remove them from the oven and let them cool slightly. Carefully cut each potato in half lengthwise and scoop out a portion of the insides, leaving a border so that the skins hold their shape.

            Mix the Filling: Add the scooped potato insides to the buffalo chicken mixture. Mix in the sour cream, half of the green onions, and season with salt and pepper to taste.

              Stuff the Potatoes: Spoon the buffalo chicken mixture back into each potato skin, filling them generously. Top the stuffed potatoes with the remaining cheddar cheese.

                Bake Again: Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                  Garnish and Serve: Remove from the oven and sprinkle with the remaining green onions and optional blue cheese crumbles. Serve hot and enjoy the spicy deliciousness!
