Buffalo Chickpea Mac and Cheese

8 oz elbow macaroni

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup buffalo sauce (adjust to your spice preference)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup cream cheese

1/2 cup milk (dairy or plant-based)

1/4 cup green onions, sliced (for garnish)

Optional: blue cheese crumbles (for serving)

Cook the Pasta: In a large pot, bring water to a boil and add a pinch of salt. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chickpeas: In a large skillet over medium heat, add the olive oil. Once hot, add the drained and rinsed chickpeas. Sprinkle with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chickpeas are slightly crispy and golden brown.

      Make the Cheese Sauce: In the same skillet with the chickpeas, reduce the heat to low and add the buffalo sauce, cream cheese, and milk. Stir until the cream cheese has melted and combined smoothly with the sauce.

        Combine: Add both the shredded cheddar and mozzarella cheese to the skillet, stirring constantly until the cheeses are melted and the sauce is creamy. If the sauce is too thick, you can add a splash more milk to reach your desired consistency.

          Mix in the Pasta: Carefully fold in the cooked macaroni into the cheese sauce mixture, ensuring every piece is coated with the creamy, spicy goodness. Adjust seasoning as necessary.
