Buffalo Chickpea & Ranch Pita Pizzas

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 tablespoon hot sauce (like Frank's RedHot)

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

4 whole-wheat pitas

1/2 cup ranch dressing (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup chopped green onions (for garnish)

Optional: fresh cilantro or parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: In a medium bowl, combine the drained chickpeas, olive oil, hot sauce, garlic powder, smoked paprika, salt, and black pepper. Toss well to coat the chickpeas evenly.

      Roast the Chickpeas: Spread the seasoned chickpeas on a baking sheet lined with parchment paper. Roast in the preheated oven for 20 minutes, or until they are crispy, shaking the pan halfway through for even cooking.

        Assemble the Pita Pizzas: While the chickpeas roast, prepare the pita bases. Place the whole-wheat pitas on a large baking sheet. Spread 2 tablespoons of ranch dressing on each pita, followed by a generous amount of shredded mozzarella cheese.

          Add Buffalo Chickpeas: Once the chickpeas are done roasting, remove them from the oven and sprinkle them evenly over the cheesed pitas.
