Ingredients

4 salmon fillets, skinless (about 6 ounces each)

1 cup unsalted butter

1 cup dry white wine (such as Sauvignon Blanc)

1 lemon, sliced

4-6 fresh dill sprigs (more for garnish)

1 tablespoon capers, rinsed and drained

Sea salt and freshly cracked black pepper to taste

Optional: fresh lemon wedges for serving

Instructions

Prepare the Poaching Liquid: In a medium saucepan, combine the dry white wine, half of the lemon slices, 4-5 dill sprigs, and a few pinches of salt. Bring to a gentle simmer over medium heat.

Melt the Butter: In a separate small saucepan, melt the unsalted butter over low heat. Once melted, set aside but keep warm.

Poach the Salmon: Once the poaching liquid is simmering, carefully place the salmon fillets into the liquid. If necessary, add more water or wine to ensure the salmon is mostly submerged. Cover the saucepan and cook for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Prepare the Butter Dill Sauce: While the salmon is poaching, whisk the warm melted butter with a pinch of sea salt, black pepper, and the capers in a small bowl. Set aside.

Serve: Using a slotted spatula, carefully transfer the poached salmon fillets to serving plates. Drizzle each fillet with the butter dill sauce and garnish with additional dill sprigs and lemon wedges.

Enjoy: Pair your Butter Dill Poached Salmon with a fresh green salad or your choice of side dishes for a complete meal.
