Cajun Salmon Rice Bowls

2 salmon fillets (about 6 ounces each)

1 tablespoon Cajun seasoning

1 cup jasmine rice

2 cups chicken or vegetable broth

1 tablespoon olive oil

1 red bell pepper, diced

1 cup corn kernels (fresh, frozen, or canned)

1 avocado, sliced

1 cup cherry tomatoes, halved

1/4 cup green onions, sliced

1 lime, juiced

Salt and pepper to taste

Optional: fresh cilantro, for garnish

Cook the Rice: Begin by rinsing the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the washed rice and the chicken or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the broth is absorbed. Once done, fluff the rice with a fork and set aside.

    Prepare the Salmon: While the rice is cooking, season the salmon fillets on both sides with Cajun seasoning, salt, and pepper.

      Cook the Salmon: Heat the olive oil in a large skillet over medium-high heat. When the oil is hot, add the salmon fillets, cooking them skin-side down first if applicable. Cook for about 4-5 minutes on each side or until the salmon is crispy on the outside and flakes easily with a fork. Remove from the skillet and let it rest for a few minutes before breaking it into large chunks.

        Sauté the Vegetables: In the same skillet, add the diced red bell pepper and corn kernels. Sauté for 3-4 minutes until the vegetables are tender and lightly caramelized. Season with salt and pepper to taste.

          Assemble the Bowls: Divide the cooked rice into serving bowls. Top with sautéed bell pepper and corn mix, followed by the chunks of Cajun salmon. Add avocado slices, cherry tomato halves, and green onions to each bowl.

            Finish with Lime: Squeeze fresh lime juice over the top of each bowl for a refreshing kick. Optional: garnish with fresh cilantro if desired.
