2 (14.75 oz) cans of salmon (skinless and boneless)

1 cup breadcrumbs (panko or regular)

1/2 cup finely chopped onion

1/2 cup finely chopped celery

2 large eggs

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon Old Bay seasoning (optional)

Salt and pepper to taste

2 tablespoons fresh lemon juice

Olive oil or vegetable oil for frying

Fresh parsley or dill for garnish (optional)

Instructions
 

Prep the Salmon: Drain the canned salmon, removing as much liquid as possible. Flake the salmon into a mixing bowl, ensuring there are no bones or skin remaining.

    Combine Ingredients: Add the breadcrumbs, chopped onion, chopped celery, eggs, mayonnaise, Dijon mustard, garlic powder, Old Bay seasoning (if using), salt, pepper, and lemon juice to the bowl. Mix until everything is well combined, and the mixture holds together—if too wet, add a bit more breadcrumbs.

      Form Patties: Using your hands, form the mixture into patties, about 2-3 inches in diameter and about 1/2 inch thick. You should yield around 8-10 patties depending on size.

        Chill (Optional): For extra firm patties, refrigerate the formed patties for about 30 minutes to allow them to set.

          Cook the Patties: Heat a skillet over medium heat and add enough oil to coat the bottom. When oil is hot, carefully place the patties in the skillet (you may need to do this in batches).

            Fry until Golden: Cook the patties for about 4-5 minutes on each side or until they are golden brown and crispy. Adjust heat if necessary to avoid burning.

              Drain and Serve: Once cooked, transfer the patties to a plate lined with paper towels to drain any excess oil.

                Garnish and Enjoy: Garnish with fresh parsley or dill if desired. Serve warm, alongside a squeeze of lemon or your favorite dipping sauce.
