1 lb chicken breast, cut into 1-inch cubes

1 cup cherry tomatoes

1 cup fresh mozzarella balls (bocconcini)

1 cup fresh basil leaves

1/4 cup balsamic glaze

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper, to taste

8 wooden or metal skewers

Marinate the Chicken: In a bowl, combine the cut chicken breasts with olive oil, garlic powder, salt, and pepper. Toss well to ensure chicken is evenly coated. Let it marinate for at least 30 minutes (up to 2 hours in the fridge for more flavor).

    Prepare Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning. This step is not needed for metal skewers.

      Assemble Skewers: On each skewer, thread one cube of marinated chicken, followed by a cherry tomato, a mozzarella ball, and a basil leaf. Repeat this process until each skewer is filled, leaving a little space at the ends for easy handling. You can alternate the order if desired.

        Preheat the Grill: Preheat your grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.

          Grill the Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through with nice grill marks and reaches an internal temperature of 165°F (75°C).

            Add Balsamic Glaze: Once the skewers are done, drizzle them with balsamic glaze for added flavor. This enhances the dish and adds a touch of sweetness.

              Serve: Arrange the skewers on a serving platter and garnish with extra basil leaves if desired. Enjoy warm or at room temperature.
