Caprese Pasta Salad with Mozzarella Pearls

Ingredients
  

8 oz rotini pasta (or pasta of your choice)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella pearls

1 cup fresh basil leaves, torn

1/4 cup extra virgin olive oil

2 tbsp balsamic vinegar

1 tsp garlic powder

Salt and pepper, to taste

1/4 cup pine nuts (optional, for added crunch)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside in a large mixing bowl.

      Prepare the Vegetables:

        - While the pasta is cooking, prepare the cherry tomatoes by washing and slicing them in half. Add the halved tomatoes to the mixing bowl with the cooked pasta.

          Mix in the Mozzarella:

            - Gently fold in the fresh mozzarella pearls into the bowl with pasta and tomatoes.

              Add Fresh Basil:

                - Tear the fresh basil leaves into smaller pieces, ensuring they release their aromatic oils. Incorporate the torn basil into the pasta mixture.

                  Make the Dressing:

                    - In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, garlic powder, salt, and pepper until well combined.

                      Combine Everything:
