2 cups rolled oats

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon salt

2 cups unsweetened almond milk (or any milk of your choice)

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

1 large apple, peeled, cored, and diced (about 1 cup)

1/2 cup chopped walnuts (optional)

1/2 cup caramel sauce (store-bought or homemade)

Extra apple slices and walnuts for topping (optional)

Instructions
 

Preheat and Prep: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir to combine all the dry ingredients.

      Mix Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, and vanilla extract until well combined.

        Combine Mixtures: Pour the wet ingredients into the bowl of dry ingredients. Add in the diced apple and chopped walnuts (if using). Stir until everything is evenly mixed.

          Fill Muffin Tin: Scoop the mixture into the prepared muffin tin, filling each cup about 3/4 full. Create a small indentation in the center of each cup for the caramel sauce.

            Add Caramel Sauce: Drizzle about 1 teaspoon of caramel sauce into the indentation of each oatmeal cup.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.

                Cool: Remove the muffin tin from the oven and let the oatmeal cups cool in the tin for about 10 minutes. Then, carefully transfer them to a wire rack to cool completely.
