Caramel Chocolate Chip Bars

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1 cup caramel bits

1/2 cup chopped pecans or walnuts (optional)

1 teaspoon sea salt (for topping)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, allowing some overhang for easy removal later.

    Cream the Butters: In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy and smooth. This should take about 2-3 minutes using an electric mixer.

      Add Eggs and Vanilla: Add the eggs, one at a time, to the sugar mixture, mixing well after each addition. Stir in the vanilla extract until thoroughly combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.

          Fold in Chocolate and Caramel: Gently fold in the semi-sweet chocolate chips and caramel bits into the batter. If you are using nuts, add them at this stage as well.

            Spread in Pan: Pour the batter into the prepared baking pan, spreading it out evenly. Sprinkle a bit of sea salt on top for a delicious salted caramel flavor.

              Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out mostly clean (a few crumbs are okay!).

                Cool and Cut: Remove the pan from the oven, and allow the bars to cool in the pan for at least 15 minutes. If you used parchment paper, lift the bars out using the overhang and transfer them to a wire rack to cool completely. Once cooled, cut into squares or rectangles.

                  Serve & Enjoy: Serve the bars as they are, or warm them slightly and add a scoop of vanilla ice cream on top for an indulgent dessert.
