1 cup unpopped popcorn kernels (about 16 cups popped)

1 cup unsalted butter (2 sticks)

2 cups packed brown sugar

1/2 cup light corn syrup

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon salt

Optional: 1 cup chopped nuts or pretzels for added crunch

Pop the Popcorn: Begin by popping the popcorn kernels using an air popper or stovetop method. If using stovetop, heat 2 tablespoons of vegetable oil in a large pot, add the kernels, cover with a lid, and shake occasionally until popping slows. Once popped, place the popcorn in a large mixing bowl, making sure to remove any unpopped kernels.

    Make the Caramel Sauce: In a medium saucepan over medium heat, combine the unsalted butter, brown sugar, and light corn syrup. Stir continuously until the mixture starts to bubble. Allow it to boil for 4-5 minutes without stirring, then remove from heat.

      Add Flavorings: Stir in the vanilla extract, baking soda, and salt. Be careful as the mixture will bubble up when you add the baking soda. Mix until smooth.

        Combine Popcorn and Caramel: Slowly pour the caramel sauce over the popped popcorn, using a spatula to gently fold and coat the popcorn evenly. If using nuts or pretzels, add them now to the mixture for extra texture.

          Bake for Crunch: Preheat your oven to 250°F (120°C). Spread the caramel-coated popcorn evenly onto a large baking sheet lined with parchment paper. Bake for 45 minutes, stirring every 15 minutes to ensure even coating and prevent burning.

            Cool and Store: Remove the popcorn from the oven and allow it to cool completely on the baking sheet. Once cooled, break it into pieces and store in an airtight container.
