Caramelized Onion Gruyère Tart

1 sheet of puff pastry (thawed)

3 large yellow onions, thinly sliced

2 tablespoons olive oil

1 tablespoon unsalted butter

1 tablespoon sugar (brown sugar preferred)

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon fresh thyme leaves (plus more for garnish)

200g (about 7 oz) Gruyère cheese, grated

2 large eggs

1 cup heavy cream

1 teaspoon Dijon mustard

Optional: balsamic glaze for drizzling

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Puff Pastry: Roll out the thawed puff pastry on a lightly floured surface to fit your tart pan (approximately 11 inches). Transfer the pastry into the tart pan and trim any excess edges.

      Caramelize the Onions: In a large skillet, heat olive oil and butter over medium heat. Add the sliced onions, sugar, salt, and pepper. Sauté the onions, stirring occasionally, for about 25-30 minutes until they are soft and caramelized. Add the fresh thyme leaves in the last 5 minutes of cooking.

        Mix the Custard: In a mixing bowl, whisk together the eggs, heavy cream, and Dijon mustard until well combined. Season with a pinch of salt and pepper.

          Assemble the Tart: Spread the caramelized onions evenly over the prepared puff pastry. Pour the egg and cream mixture over the onions and sprinkle the grated Gruyère cheese on top.

            Bake the Tart: Place the tart in the preheated oven and bake for 35-40 minutes or until the filling is set and the pastry is golden brown.
