Ingredients

2 ripe peaches, sliced

1 tablespoon unsalted butter

1 tablespoon brown sugar

1 teaspoon vanilla extract

8 slices of crusty bread (e.g., sourdough or ciabatta)

1 cup Brie cheese, sliced

1/4 cup fresh basil leaves (optional)

Pinch of salt

Olive oil for grilling

Instructions

Caramelize the Peaches:

    - In a medium skillet over medium heat, melt the butter.

      - Add the sliced peaches, brown sugar, vanilla extract, and a pinch of salt. Stir gently to combine.

        - Cook for about 5-7 minutes, stirring occasionally, until the peaches are tender and caramelized. Remove from heat and set aside.

          Assemble the Sandwiches:

            - Lay out your slices of bread on a clean surface.

              - On four slices of bread, layer with slices of Brie cheese and caramelized peaches. If using, sprinkle fresh basil leaves on top for added flavor.

                - Top with the remaining slices of bread to create sandwiches.

                  Grill the Sandwiches:

                    - Preheat a large skillet or griddle over medium heat and brush with a light coating of olive oil.

                      - Place the assembled sandwiches in the skillet and cook for about 3-4 minutes, or until the bottom is golden brown and the Brie starts to melt.

                        - Carefully flip the sandwiches and grill the other side for another 3-4 minutes, until golden brown.

                          Serve:

                            - Remove the sandwiches from the skillet and let them cool for a minute before slicing in half. Serve warm with a side of fresh greens or a light salad for a perfect contrast.
