2 ears of corn, husked

1 ripe avocado, pitted and peeled

1 medium tomato, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

1 teaspoon garlic powder

Salt and pepper, to taste

Olive oil, for grilling

Tortilla chips, for serving

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat.

    Char the Corn: Lightly brush the corn with olive oil and place the ears on the grill. Cook for about 10-15 minutes, turning occasionally until the corn is charred and cooked through. Remove from the grill and let cool.

      Prepare the Base: In a mixing bowl, mash the ripe avocado using a fork until smooth or leave some chunks for texture.

        Add the Vegetables: Once the corn has cooled enough to handle, carefully slice the kernels off the cobs and add them to the bowl with the avocado. Add the diced tomato, finely chopped red onion, minced jalapeño, and chopped cilantro.

          Season It Up: Squeeze the lime juice over the mixture, add the garlic powder, and season with salt and pepper to your taste. Mix everything together gently to combine.

            Taste and Adjust: Taste the dip and adjust the seasoning if necessary, adding more lime juice or salt according to your preference.

              Serve: Transfer the dip to a serving bowl and serve immediately with tortilla chips or cover and refrigerate if serving later.
