8 oz (225 g) spaghetti or your choice of pasta

3 large bell peppers (red, yellow, and green, sliced into strips)

3 tablespoons olive oil

4 cloves garlic (minced)

1 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

1 cup cherry tomatoes (halved)

1 teaspoon balsamic vinegar

Fresh basil leaves (for garnish)

Grated Parmesan cheese (for serving)

Char the Peppers: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the bell pepper strips. Cook, stirring occasionally, until the peppers are charred and tender, about 8-10 minutes. Season with salt and pepper.

    Cook the Pasta: Meanwhile, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

      Sauté Garlic: In the same skillet with the charred peppers, add another tablespoon of olive oil along with the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

        Combine Ingredients: Add the cooked pasta and cherry tomatoes to the skillet with the charred peppers. Pour in the reserved pasta water (start with ½ cup and add more as needed) and balsamic vinegar. Toss everything together until well combined, letting the pasta soak up the flavors for about 2-3 minutes.

          Adjust Seasoning: Taste and adjust seasoning with additional salt, pepper, and red pepper flakes if desired.
