4 large russet potatoes, peeled and cubed

1/2 cup unsalted butter, softened

1 cup whole milk (or more for desired creaminess)

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup cooked bacon, crumbled (about 8 slices)

1/2 cup green onions, sliced (for garnish)

Prepare the Potatoes: In a large pot, add the cubed potatoes and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to medium and simmer for about 15-20 minutes or until the potatoes are fork-tender. Drain and return to the pot.
