1 pound ground beef

1 onion, diced

2 cloves garlic, minced

1 cup uncooked long-grain rice

3 cups beef broth

1 can diced tomatoes (14.5 oz), drained

1 cup frozen mixed vegetables (peas, corn, carrots)

1 teaspoon dried oregano

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 ½ cups shredded cheddar cheese

½ cup sour cream

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Beef: In a large skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat, if necessary. Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent (about 3-4 minutes).

      Combine Ingredients: Stir in the uncooked rice, beef broth, drained diced tomatoes, frozen vegetables, oregano, paprika, salt, and black pepper. Bring the mixture to a simmer and cook for 5 minutes.

        Mix in Cheese and Sour Cream: Remove from heat and fold in 1 cup of shredded cheddar cheese and the sour cream until well combined.

          Transfer to Casserole Dish: Pour the beef and rice mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Top with Cheese: Sprinkle the remaining ½ cup of shredded cheddar cheese on top of the casserole to create a golden, cheesy crust.

              Bake: Cover the casserole with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
