1 lb ground beef

1 cup long-grain white rice, uncooked

1 can (15 oz) diced tomatoes (with juice)

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 medium onion, chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, corn, and carrots)

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Brown the Beef: In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Sauté Vegetables: To the skillet with the beef, add the chopped onion and minced garlic. Sauté for an additional 3-4 minutes until the onion is translucent.

        Combine Ingredients: Stir in the diced tomatoes, cream of mushroom soup, beef broth, uncooked rice, frozen mixed vegetables, Italian seasoning, salt, black pepper, and paprika. Mix everything well until thoroughly combined.

          Transfer to Casserole Dish: Pour the beef and rice mixture into a greased 9x13-inch casserole dish, spreading it evenly.

            Add Cheese: Sprinkle half of the shredded cheddar cheese over the top of the mixture.

              Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 30 minutes.

                Uncover and Add Cheese: After 30 minutes, remove the foil and sprinkle the remaining cheddar cheese on top. Return the dish to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly, and the rice is tender.

                  Garnish and Serve: Remove from the oven, let it cool slightly, and garnish with fresh parsley. Serve warm and enjoy your family meal!
