1 lb ground beef

1 cup long-grain white rice

2 cups beef broth

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheddar cheese (plus extra for topping)

1 small onion, diced

2 cloves garlic, minced

1 cup bell pepper, diced (any color)

1 tsp paprika

1 tsp cumin

½ tsp salt

½ tsp black pepper

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until they are soft and translucent (about 3-4 minutes). Stir in the minced garlic and cook for an additional 1 minute until fragrant.
