Cheesy Broccoli and Rice Casserole

1 cup uncooked long-grain white rice

2 cups chicken or vegetable broth

3 cups fresh broccoli florets (or frozen)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1 cup grated sharp cheddar cheese

1 cup grated mozzarella cheese

1/2 cup sour cream

1/2 cup cream of mushroom soup (or cream of your choice)

1/4 cup grated Parmesan cheese (for topping)

Optional: 1/2 cup breadcrumbs (for extra crunch)

Instructions
 

Cook the Rice: In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the uncooked rice and reduce heat to low. Cover and simmer for about 15 minutes or until the rice is tender and liquid is absorbed.

    Prepare the Broccoli: While the rice is cooking, steam the broccoli florets in a steamer basket or microwave until just tender (about 4-5 minutes). Set aside.

      Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Mix Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onions and garlic, steamed broccoli, salt, black pepper, paprika, cheddar cheese, mozzarella cheese, sour cream, and cream of mushroom soup. Stir until everything is evenly combined.

          Assemble the Casserole: Preheat your oven to 350°F (175°C). Transfer the mixture into a greased 9x13 inch baking dish, spreading it out evenly. Sprinkle the grated Parmesan cheese over the top. If using breadcrumbs, sprinkle them on top for an extra crunchy finish.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
