2 cups fresh broccoli florets (or frozen, thawed)

1 cup long-grain white rice (uncooked)

2 ½ cups vegetable or chicken broth

1 cup sharp cheddar cheese, shredded

1 cup cream of mushroom soup (or homemade)

1 cup milk

1 small onion, finely chopped

2 cloves garlic, minced

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon paprika (optional)

½ cup breadcrumbs (for topping)

1 tablespoon olive oil (for greasing the dish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish with the olive oil.

    Cook the Rice: In a saucepan, combine the uncooked rice and 2 ½ cups of vegetable or chicken broth. Bring it to a boil, cover, and reduce the heat to low. Cook for about 15-18 minutes until the rice is tender and all the liquid is absorbed. Remove from heat and set aside.

      Sauté Veggies: In a large skillet, heat a little olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 3-4 minutes or until the onion becomes translucent.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onion and garlic, broccoli florets, cream of mushroom soup, milk, shredded cheese (reserve a little for topping), salt, pepper, and paprika (if using). Mix everything until well combined.

          Transfer to Dish: Pour the mixture into the prepared casserole dish, spreading it evenly. Top it off with the remaining shredded cheese and breadcrumbs.

            Bake: Cover the casserole with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and the top is golden brown.
