1 large head of cauliflower (about 4 cups riced)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup fresh parsley, chopped (optional, for garnish)

Marinara sauce (for dipping)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.

    Rice the Cauliflower: Cut the cauliflower into florets and pulse in a food processor until it resembles rice or fine crumbs. You should have about 4 cups of riced cauliflower.

      Cook the Cauliflower: Transfer the riced cauliflower to a microwave-safe bowl and microwave on high for about 7-8 minutes, or until softened. Let it cool for a few minutes.

        Remove Excess Moisture: After cooling, place the cooked cauliflower in a clean dish towel or cheese cloth. Gather the ends and twist it to squeeze out as much moisture as possible. This step is crucial for crispy breadsticks!

          Mix Ingredients: In a large mixing bowl, combine the drained cauliflower, mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, oregano, salt, and pepper. Mix well until all ingredients are fully incorporated.

            Shape the Breadsticks: Spread the cauliflower mixture onto the prepared baking sheet. Press it down firmly into a rectangle shape, about 1/2 inch thick, making sure it's even for consistent cooking.

              Bake: Bake in the preheated oven for 25-30 minutes or until the edges are golden brown and the center is set.

                Add More Cheese: Remove the baking sheet from the oven and sprinkle additional mozzarella cheese on top, if desired. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
