Cheesy Chicken and Broccoli Rice Casserole

2 cups cooked chicken, shredded or diced

1 cup broccoli florets (fresh or frozen)

1 cup long-grain white rice (uncooked)

2 cups chicken broth

1 cup shredded cheddar cheese

1 cup cream of chicken soup (or cream of mushroom for a vegetarian option)

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 teaspoon olive oil

1/2 teaspoon black pepper

1/2 teaspoon paprika

Salt to taste

1/2 cup breadcrumbs (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Aromatics: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-5 minutes.

      Prepare the Rice Mixture: In a large mixing bowl, combine the uncooked rice, chicken broth, cream of chicken soup, black pepper, paprika, and salt. Mix well until combined.

        Combine Ingredients: Stir in the sautéed onion and garlic, shredded chicken, broccoli florets, and half of the shredded cheddar cheese into the rice mixture. Mix everything until well blended.

          Transfer to Baking Dish: Grease a 9x13 inch (or similar sized) casserole dish. Pour the rice and chicken mixture into the prepared dish and spread it evenly.

            Add Cheese Topping: Sprinkle the remaining shredded cheddar cheese evenly on top of the casserole. If desired, add breadcrumbs for an extra crispy topping.
