2 cups cooked chicken, shredded or diced

2 cups broccoli florets (fresh or frozen)

1 cup long-grain white rice (uncooked)

3 cups chicken broth

1 cup shredded sharp cheddar cheese

1 cup cream of chicken soup (or homemade)

1/2 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup breadcrumbs (optional for topping)

2 tablespoons olive oil (optional for breadcrumb topping)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Mix the Base: In a large mixing bowl, combine the shredded chicken, broccoli florets, uncooked rice, chicken broth, cheese, cream of chicken soup, sour cream, garlic powder, onion powder, paprika, salt, and pepper. Stir until everything is well incorporated.

      Prepare the Baking Dish: Lightly grease a 9x13-inch (or similar) baking dish with non-stick spray or a little olive oil to prevent sticking.

        Transfer the Mixture: Pour the chicken and rice mixture into the prepared baking dish, spreading it out evenly.

          Optional Breadcrumb Topping: If you like a crunchy topping, in a small bowl, combine the breadcrumbs with olive oil until coated. Sprinkle this evenly over the casserole mixture.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, until the rice is tender and the topping is golden brown.

              Cool & Serve: Once baked, allow the casserole to cool for about 5-10 minutes before serving. This will help it set up a bit and make it easier to serve.

                Garnish (Optional): For added flavor, sprinkle fresh chopped parsley or chives on top before serving.
