8 oz elbow macaroni

4 strips of thick-cut bacon, chopped

1 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1/2 tsp smoked paprika

1/2 tsp chipotle chili powder (adjust to taste)

1/2 tsp ground cumin

1/4 tsp salt (or to taste)

1/4 tsp black pepper

2 cups sharp cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

2 cups whole milk

2 tbsp all-purpose flour

1/4 cup cream cheese

1/4 cup chopped fresh cilantro (for garnish)

Sliced jalapeños (optional for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package directions until al dente. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy and browned, about 6-8 minutes. Remove the bacon with a slotted spoon and place it on a paper towel to drain excess fat, leaving about 1 tablespoon of the drippings in the skillet.

      Sauté Aromatics: In the same skillet with the bacon drippings, add the olive oil, then sauté the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant. Stir in the smoked paprika, chipotle chili powder, ground cumin, salt, and black pepper.

        Make the Cheese Sauce: Sprinkle the flour over the cooked aromatics and stir well to incorporate. Slowly pour in the milk while whisking continuously to avoid lumps. Bring the mixture to a gentle simmer and cook for about 3-5 minutes, or until it thickens slightly.
