4 large bell peppers (any color)

4 large eggs

1 cup fresh spinach, chopped

1/2 cup shredded cheddar cheese

1/4 cup feta cheese, crumbled

1/4 cup milk

1 tablespoon olive oil

1 teaspoon garlic powder

Salt & pepper to taste

Fresh parsley, for garnish

Instructions
 

Preheat the oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the bell peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Place them cut-side up in a baking dish.

      Sauté the spinach: In a skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilting. Remove from heat and let it cool slightly.

        Prepare the egg mixture: In a mixing bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined.

          Combine ingredients: Add the sautéed spinach, cheddar cheese, and feta cheese to the egg mixture. Stir gently until just combined.

            Fill the peppers: Carefully pour the egg mixture into each bell pepper until they’re filled to the top. If there’s any leftover mixture, you can pour it into a separate small oven-safe dish.

              Bake: Place the filled peppers in the preheated oven and bake for 25-30 minutes or until the eggs are fully set and the tops are golden and bubbly.

                Garnish and serve: Once out of the oven, let the breakfast boats cool for a couple of minutes. Garnish with fresh parsley before serving.
