3 pounds baby potatoes, halved

1 large onion, thinly sliced

2 tablespoons olive oil

1 tablespoon butter

2 cups beef broth (low sodium)

1 cup sour cream

1 cup shredded Gruyère cheese (plus extra for topping)

1 cup shredded mozzarella cheese

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Onions: In a skillet over medium heat, add olive oil and butter. Once melted, add the sliced onions. Sauté for about 10-12 minutes, stirring occasionally, until they are soft and lightly caramelized.

    Prepare the Potatoes: In a large bowl, combine the halved baby potatoes with garlic powder, onion powder, dried thyme, salt, and pepper. Toss well to ensure the potatoes are evenly coated with the seasonings.

      Layer in the Crockpot: Place half of the seasoned potatoes at the bottom of the crockpot. Next, evenly spread half of the sautéed onions over the potatoes. Repeat this process with the remaining potatoes and onions.
