4 medium-sized russet potatoes

4 tbsp unsalted butter, melted

4 cloves garlic, minced

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

2 tbsp fresh parsley, chopped (plus extra for garnish)

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika (optional for extra flavor)

Olive oil for drizzling

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

    Prepare the Potatoes: Scrub the potatoes under running water to clean them thoroughly. Pat them dry with a paper towel.

      Make Hasselback Cuts: Using a sharp knife, carefully make thin, even slices across the width of each potato, about 1/8 inch apart. Take care not to cut all the way through; leave about 1/4 inch at the bottom intact.

        Melt Butter and Mix Garlic: In a small bowl, combine the melted butter, minced garlic, salt, black pepper, and paprika (if using). Stir well to incorporate all ingredients.

          Brush the Potatoes: Place the potatoes on a baking sheet lined with parchment paper. Brush the garlic butter mixture generously all over the potatoes, ensuring some seeps into the cuts.

            Bake the Potatoes: Bake in the preheated oven for 45-50 minutes, or until the potatoes are tender and crispy on the outside. Halfway through, baste the potatoes with additional melted garlic butter.

              Add the Cheese: Once the potatoes are done, remove them from the oven. Sprinkle the cheddar cheese evenly into the cuts of each potato and top with grated Parmesan cheese. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
