1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon lemon juice added)

1/4 cup unsalted butter, melted

2 large eggs

1 cup shredded cheddar cheese

1/2 cup chopped pickled jalapeños (or fresh if preferred)

1/2 cup corn kernels (canned, frozen, or fresh)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease it with cooking spray.

    Prepare Dry Ingredients: In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, baking soda, and salt. Whisk them together until well blended.

      Mix Wet Ingredients: In another bowl, whisk together the buttermilk, melted butter, and eggs until fully combined.

        Combine Mixtures: Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

          Fold in Add-ins: Gently fold in the shredded cheddar cheese, chopped jalapeños, and corn kernels until evenly distributed throughout the batter.

            Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. This allows room for them to rise without overflowing.

              Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

                Cool and Serve: Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature.
