Cheesy Jalapeño Potato Casserole

4 large russet potatoes, peeled and thinly sliced

2 cups sharp cheddar cheese, shredded

1 cup pepper jack cheese, shredded

1 cup sour cream

1 cup milk

1 (10 oz) can cream of mushroom soup (or use a homemade version)

1/2 cup fresh jalapeños, finely chopped (seeds removed for less heat)

1/2 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup panko breadcrumbs (for topping)

2 tablespoons unsalted butter, melted

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    Prepare the Sauce: In a large mixing bowl, combine the sour cream, milk, cream of mushroom soup, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Whisk until smooth and well blended.

      Layer the Ingredients: Start layering your casserole. Place half of the sliced potatoes in the bottom of the prepared baking dish. Pour half of the creamy sauce over the potatoes, spreading it evenly with a spatula. Sprinkle with half of the sharp cheddar and pepper jack cheese, followed by half of the chopped jalapeños and green onions.

        Repeat Layers: Repeat the layering process with the remaining potatoes, sauce, cheeses, jalapeños, and green onions.

          Top with Breadcrumbs: In a small bowl, mix the panko breadcrumbs with the melted butter. Sprinkle the breadcrumb mixture evenly over the top of the casserole.

            Bake: Cover the baking dish with aluminum foil (to prevent burning) and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden and bubbly.

              Cool and Serve: Allow the casserole to rest for about 10 minutes before serving. This will help it set a bit and make it easier to portion. Serve warm, garnished with additional green onions if desired.
