Cheesy Spinach and Tomato Stuffed Shells

12-15 large jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus extra for topping

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce, divided

1 tsp garlic powder

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly incorporated.

        Stuff the Shells: Spread 1 cup of marinara sauce evenly across the bottom of a 9x13 inch baking dish. Take each pasta shell and spoon the cheesy spinach mixture into it, placing the filled shells seam side up in the baking dish.

          Add Sauce and Cheese: Pour the remaining marinara sauce over the stuffed shells, making sure to cover them completely. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

              Serve: Remove from the oven, let cool for a few minutes, then garnish with fresh basil leaves if desired. Serve warm and enjoy your cheesy creation!
