Cheesy Spinach Stuffed Pasta Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped (or 1 cup frozen, thawed and drained)

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the pasta: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook until al dente, about 8-10 minutes. Drain and set aside.

      Prepare the filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, minced garlic, Italian seasoning, and salt and pepper. Mix well until all ingredients are incorporated.

        Stuff the shells: Carefully spoon the spinach and cheese mixture into each cooked pasta shell, making sure to fill them generously.

          Assemble the dish: Spread 1 cup of marinara sauce evenly on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells seam-side up in the dish. Pour the remaining marinara sauce over the shells and sprinkle the remaining mozzarella cheese on top.

            Bake the shells: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

              Garnish and serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy your cheesy, delicious spinach stuffed pasta shells!
