4 large flour tortillas

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1 cup mixed bell peppers (red, yellow, green), diced

1 cup zucchini, diced

1 cup frozen corn (or fresh if available)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

Salt and pepper, to taste

2 tbsp olive oil (for frying)

Optional: Fresh cilantro, sour cream, or salsa for serving

Instructions
 

Prep the Vegetables: In a skillet, heat 1 tbsp of olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent (about 3-5 minutes).

    Cook the Vegetables: Add the diced bell peppers, zucchini, and corn to the skillet. Sprinkle in the cumin, chili powder, salt, and pepper. Sauté for an additional 5-7 minutes, or until the vegetables are tender. Remove from heat and set aside.

      Assemble the Quesadillas: Lay one tortilla on a clean surface. Sprinkle a layer of cheese (about 1/4 cup) over half of the tortilla, followed by a generous scoop of the sautéed vegetables. Top with another layer of cheese, then fold the tortilla over to close.

        Cook the Quesadillas: In the same skillet, add a little more olive oil and heat over medium-high heat. Once hot, carefully place the filled tortilla in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and the cheese has melted. Repeat with the remaining tortillas, adding oil as needed.

          Slice and Serve: Remove the quesadillas from the skillet and let them cool for a minute. Then, slice them into wedges. Serve warm with optional garnishes like fresh cilantro, sour cream, or salsa.
