Cheesy Vegetable Quesadillas with Avocado Dip

For the Quesadillas:

4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 cup bell peppers (mixed colors), diced

1 cup zucchini, diced

1 cup corn (fresh or frozen)

1 small red onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

2 tbsp olive oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

For the Avocado Dip:

2 ripe avocados

1 lime, juiced

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

Fresh cilantro, chopped (optional)

Instructions
 

Prepare the Vegetable Filling:

    - In a large skillet, heat 2 tablespoons of olive oil over medium heat.

      - Add the diced onion and garlic, sautéing until they become translucent (about 3-4 minutes).

        - Add the bell peppers, zucchini, and corn. Season with ground cumin, smoked paprika, salt, and pepper. Sauté for an additional 5-7 minutes until the vegetables are tender. Remove from heat and set aside.

          Assemble the Quesadillas:

            - Place a tortilla in the same skillet or a separate large skillet over medium heat.

              - Sprinkle a layer of mozzarella cheese on half of the tortilla.

                - Spoon a generous amount of the vegetable mixture over the cheese, then top with cheddar cheese.

                  - Fold the other half of the tortilla over the filling, pressing gently to seal.

                    Cook the Quesadillas:

                      - In the skillet, increase the heat to medium-high. Cook for 3-4 minutes on each side until the tortilla is golden brown and crispy, and the cheese is melted. Repeat with the remaining tortillas and filling.

                        - Once cooked, remove from the skillet and slice into wedges.

                          Make the Avocado Dip:

                            - In a mixing bowl, mash the ripe avocados until smooth.

                              - Stir in lime juice, garlic powder, onion powder, salt, and pepper. For added flavor, mix in chopped cilantro if desired.

                                Serve:

                                  - Arrange the quesadilla wedges on a platter and serve warm alongside the creamy avocado dip. Garnish with additional cilantro if desired.
