1 medium zucchini (about 1 cup grated)

1 cup all-purpose flour

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup olive oil

2 large eggs

1/2 cup milk

1 tablespoon baking powder

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional)

Fresh herbs (such as chives or parsley) for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease or line a muffin tin with muffin liners.

    Prepare the Zucchini: Grate the zucchini using a box grater. To remove excess moisture, place the grated zucchini in a clean kitchen towel and squeeze out as much liquid as possible.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, garlic powder, onion powder, salt, black pepper, and paprika.

        Combine Wet Ingredients: In another bowl, beat the eggs, then stir in the milk, olive oil, cheddar cheese, and Parmesan cheese. Mix until well combined.
