2 cups cooked and shredded chicken breast

1 cup fresh cherries, pitted and halved

1/2 cup crumbled feta cheese

1/4 cup sliced almonds, toasted

1/4 cup red onion, thinly sliced

1/4 cup cucumber, diced

1/2 cup cherry tomatoes, halved

1/4 cup balsamic vinaigrette

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Chicken: If not already done, cook and shred the chicken breast. You can poach, grill, or roast it as per your preference. Let it cool before adding to the salad.
