Ingredients

2 cups cooked chicken, shredded

1 small onion, diced

1 small green bell pepper, diced

1 small red bell pepper, diced

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup cream cheese, softened

1 cup cheddar cheese, shredded

1 cup provolone cheese, shredded

1 cup cooked pasta (e.g., penne or rotini)

1/2 cup chicken broth

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and red bell pepper. Sauté for about 5 minutes until they soften.

Add Garlic and Spices: Stir in the minced garlic, Italian seasoning, paprika, salt, and black pepper. Cook for an additional minute until fragrant.

Combine Chicken and Cheese: In a large mixing bowl, combine the shredded chicken, sautéed vegetables, softened cream cheese, cheddar cheese, and half of the provolone cheese. Mix well until all ingredients are evenly coated.

Add Pasta and Broth: Gently fold in the cooked pasta and chicken broth into the mixture, ensuring everything is combined.

Prepare Casserole Dish: Grease a 9x13 inch casserole dish with cooking spray or olive oil. Transfer the chicken mixture into the dish, spreading it evenly.

Top with Cheese: Sprinkle the remaining provolone cheese evenly over the top of the casserole.

Bake: Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Remove the casserole from the oven and let it sit for 5 minutes. Garnish with freshly chopped parsley before serving.
