Chicken Pesto Zucchini Boats

4 medium zucchinis

1 cup cooked chicken, shredded (grilled or rotisserie chicken works great)

1/2 cup basil pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1/2 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Cut the zucchinis in half lengthwise and scoop out the seeds with a spoon to create boats. Lightly brush or spray the zucchini halves with olive oil and place them cut-side up on a baking sheet.

    Mix the Filling: In a large bowl, combine the shredded chicken, basil pesto, halved cherry tomatoes, minced garlic, and half of the mozzarella cheese. Season the mixture with salt and pepper to taste.

      Stuff the Zucchini: Spoon the chicken and pesto mixture evenly into the hollowed-out zucchinis. Make sure to fill each boat generously.

        Top with Cheese: Sprinkle the remaining mozzarella and the grated Parmesan cheese evenly over the stuffed zucchinis.

          Bake: Place the stuffed zucchini boats in the preheated oven and bake for about 20-25 minutes, or until the zucchinis are tender and the cheese is bubbly and golden.
