Chicken Zucchini Stir Fry

1 pound boneless, skinless chicken breast, thinly sliced

2 medium zucchinis, sliced into half-moons

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce (low-sodium preferred)

1 tablespoon oyster sauce

1 tablespoon honey

2 tablespoons sesame oil (divided)

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Salt and pepper to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Prepare the Chicken: In a bowl, combine sliced chicken with 1 tablespoon of soy sauce, a pinch of salt, and pepper. Mix well and let it marinate for 15 minutes.

    Heat the Pan: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the chicken and stir-fry for about 5-7 minutes, or until cooked through and golden brown. Remove the chicken from the pan and set it aside.

      Cook the Vegetables: In the same skillet, add another tablespoon of sesame oil. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant. Then, add the sliced zucchinis and bell peppers, stir-frying for about 4-5 minutes, or until they start to soften.

        Combine Chicken and Sauce: Once the vegetables are ready, return the cooked chicken to the skillet. In a separate bowl, mix the remaining soy sauce, oyster sauce, and honey together, then pour over the chicken and vegetables. Toss everything to coat thoroughly.

          Thicken the Sauce: Add the cornstarch slurry to the stir-fry, stirring constantly until the sauce thickens and clings to the chicken and vegetables, about 1-2 minutes.

            Garnish and Serve: Remove the pan from heat, and garnish with chopped green onions and sesame seeds. Serve immediately with steamed rice or noodles.
