Chili Cheese Turkey Pasta Poppers

8 ounces of small pasta (like elbow macaroni or shells)

1 pound ground turkey

1 can (15 ounces) kidney beans, rinsed and drained

1 can (14.5 ounces) diced tomatoes (with green chilies for added spice is great)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper, to taste

Fresh cilantro or green onions, chopped (for garnish)

Cooking spray or additional oil for greasing the baking dish

Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with cooking spray or olive oil.

    Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente, then drain and set aside.

      Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 7-10 minutes.

          Mix in the Spices: Stir in the chili powder, cumin, paprika, salt, and pepper. Mix well to evenly coat the turkey with the spices.

            Combine Ingredients: In a large bowl, combine the cooked pasta, cooked turkey mixture, kidney beans, diced tomatoes (with juices), and half of both cheeses. Stir until everything is well incorporated.

              Fill the Dish: Pour the pasta mixture into the prepared baking dish, spreading it out evenly. Sprinkle the remaining cheese over the top.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

                  Garnish and Serve: Remove from the oven and allow to cool slightly. Garnish with fresh cilantro or chopped green onions before serving.
