2 pounds fresh clams (such as littlenecks or cherrystones)

4 tablespoons unsalted butter

4 cloves garlic, minced

1-2 red chili peppers, finely chopped (adjust based on spice preference)

1 tablespoon fresh ginger, grated

1 tablespoon soy sauce

1 tablespoon fresh lemon juice

1 teaspoon sugar

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Lemon wedges for serving

Crusty bread (optional, for dipping)

Clean the Clams: Begin by soaking the clams in cold salted water for about 20 minutes. This helps them expel any sand. Rinse them under cold water afterward to remove any residual grit.

    Prepare the Sauce: In a large skillet, melt the butter over medium heat. Add the minced garlic, chopped chili peppers, and grated ginger. Sauté for 2-3 minutes until fragrant but not browned. Stir in the soy sauce, lemon juice, and sugar, cooking for another minute to blend the flavors.

      Cook the Clams: Increase the heat to medium-high and add the cleaned clams to the skillet. Cover the skillet with a lid and let the clams steam for about 5-7 minutes, or until they have all opened up. Discard any clams that remain closed.
